Method
 

  1. Step 1: Cut lobster tails lengthwise with kitchen scissors. Remove meat and reserve shells.

  2. Step 2: Place lobster shells, onion, carrot, celery, and garlic on a baking sheet. Roast at 400°F for 15 minutes.

  3. Step 3: Transfer roasted shells and vegetables to a pot. Add water, thyme, and bay leaves. Simmer 30 minutes, then strain the stock.

  4. Step 4: In the same pot, melt butter. Add diced onion, carrot, and celery. Cook until soft.

  5. Step 5: Stir in garlic, tomato paste, and flour. Cook 1 minute. Add white wine and stir well.
