Step 1
- Prepare all ingredients before cooking. Chop vegetables, measure sauces, and make sure the rice is cold and separated.

- Heat a wok or large skillet over medium-high heat. Add one tablespoon of oil and allow it to heat until shimmering.

- Pour the beaten eggs into the pan and scramble until cooked. Remove from the pan and set aside.

- Add the remaining oil to the wok. Stir-fry the sliced green onions for about 30 seconds until fragrant.

- Add the cold cooked rice. Break up clumps with a spatula and mix well with the other ingredients.

- Pour soy sauce and sesame oil over the rice. Stir everything together so the rice becomes evenly coated.

- Return the scrambled eggs to the pan and mix well with the rice and vegetables.

- Continue stir-frying for about 2 minutes until everything is hot and slightly crispy. Season with salt and pepper if needed. Serve immediately.

- Day-old rice works best because it keeps the grains separate during stir-frying.
- Cook on medium-high heat to achieve the best fried rice texture.
- You can customize this recipe by adding chicken, pork, tofu, or extra vegetables.
