In a bowl, mix paprika, salt, pepper, garlic powder, onion powder, Creole seasoning, and Italian seasoning.
Pat pork chops dry and rub with olive oil on both sides.
Coat pork chops evenly with the seasoning mix. Let rest for 5–10 minutes.
In a small bowl, mix butter, minced garlic, and parsley. Set aside.
Heat a cast iron skillet over medium-high heat and add olive oil.
Place pork chops in the hot skillet and sear for 4–5 minutes without moving.
Flip and cook another 4–5 minutes until golden brown.
Transfer skillet to a preheated oven at 400°F (200°C) and cook for 10–15 minutes.
Check internal temperature (145°F / 63°C).
Remove from heat and spoon garlic butter over the chops.
Let rest for 3–5 minutes before serving.
