Step 1:
- Sift bread flour, all-purpose flour, baking soda, and salt into a bowl. Set aside.

Step 2:
- Brown the butter in a saucepan over medium heat until golden and nutty. Add water to make 1 cup total and let it cool.

- In a mixing bowl, combine brown sugar, granulated sugar, vanilla, and espresso powder.

Step 4:
- Pour in the cooled brown butter and mix until smooth.

Step 5:
- Add the egg and egg yolk. Mix until creamy and fully combined.

Step 6:
- Add the dry ingredients in portions. Mix gently until just combined.

Step 7:
- Fold in the chocolate chunks evenly.

Step 8:
- Scoop dough into portions and chill for at least 30 minutes.

Step 9:
- Preheat oven to 375°F (190°C). Bake cookies for 10–12 minutes until edges are golden.

Step 10:
- Cool slightly, then transfer to a rack and serve.

Notes
