Costco Veggie Burger Recipe

I make these Costco veggie burgers crispy in a skillet, then layer them with melty Havarti, fresh cucumber, tomato, onion, and a sprinkle of Parmesan. I serve them with sautéed asparagus and toasted pine nuts for a simple but gourmet-style meal at home.

Ingredients
  

Burger Ingredients
  • 4 Costco veggie burger patties Cook from frozen
  • 4 Sandwich thins OraWheat 9-Grain or similar
  • 4 slices Havarti cheese Or Monterey Jack
  • 1 Tomato Thinly sliced
  • 1 Cucumber Thinly sliced
  • 1/2 Red onion Thinly sliced
  • 1/4 cup Parmesan cheese Light sprinkle on each burger
  • 24 spears Fresh asparagus Trim tough ends
  • 1 cup Pine nuts Toasted in skillet
  • 3 tbsp Extra virgin olive oil For cooking patties + veggies
  • 1/2 tsp Salt Or to taste
  • 1/2 tsp Black pepper Or to taste

Equipment

  • 1 9-inch skillet Nonstick or cast iron both work
  • 1 Spatula For flipping patties without breaking
  • 1 Toaster For crisping sandwich thins
  • 1 Cutting board For slicing toppings
  • 1 Sharp knife Makes thin slicing easier
  • 1 Tongs Optional, but great for asparagus

Method
 

Step 1:
  1. Heat a 9-inch skillet over medium heat and add 1 tablespoon of olive oil. Let it warm for about 30 seconds.

  1. lace the frozen Costco veggie burger patties into the skillet. Cook for 3 to 4 minutes on the first side until golden and crisp.

  1. Add the asparagus spears around the patties. Drizzle 1 tablespoon olive oil over the asparagus so it cooks evenly.

Step 4:
  1. Add pine nuts to an open spot in the skillet. Stir often and toast for 1 to 2 minutes until lightly golden and fragrant.

Step 5:
  1. Flip the patties carefully. Stir the asparagus and pine nuts. Cook another 3 to 4 minutes until the patties are heated through and the asparagus is lightly crisp.

  1. Toast the sandwich thins in a toaster on high until crisp and golden.

Step 7:
  1. Place the toasted buns on plates. Add Havarti cheese slices to the bottom halves while the bread is still warm.

  1. Add one veggie patty on top of each cheese slice. Layer tomato, cucumber, and onion on top.

  1. Sprinkle Parmesan cheese over the toppings and season lightly with salt and black pepper.

  1. Add the top bun, press gently, and serve right away with asparagus and toasted pine nuts on the side.

Notes

  • I always recommend skillet cooking for the best crispy texture. Microwaving works in a pinch, but the patties come out soft.
  • Pine nuts burn fast, so keep stirring them and remove them as soon as they turn golden.
  • For extra flavor, I sometimes add a little garlic aioli or sriracha mayo, but I keep it light so the veggie patty still shines.
  • Store leftover cooked patties in the fridge for up to 3 days, and reheat in a skillet or air fryer for best texture.
