Step 1:
- Heat a 9-inch skillet over medium heat and add 1 tablespoon of olive oil. Let it warm for about 30 seconds.

Step 2:
- lace the frozen Costco veggie burger patties into the skillet. Cook for 3 to 4 minutes on the first side until golden and crisp.

Step 3:
- Add the asparagus spears around the patties. Drizzle 1 tablespoon olive oil over the asparagus so it cooks evenly.

Step 4:
- Add pine nuts to an open spot in the skillet. Stir often and toast for 1 to 2 minutes until lightly golden and fragrant.

Step 5:
- Flip the patties carefully. Stir the asparagus and pine nuts. Cook another 3 to 4 minutes until the patties are heated through and the asparagus is lightly crisp.

Step 6:
- Toast the sandwich thins in a toaster on high until crisp and golden.

Step 7:
- Place the toasted buns on plates. Add Havarti cheese slices to the bottom halves while the bread is still warm.

Step 8:
- Add one veggie patty on top of each cheese slice. Layer tomato, cucumber, and onion on top.

Step 9:
- Sprinkle Parmesan cheese over the toppings and season lightly with salt and black pepper.

Step 10:
- Add the top bun, press gently, and serve right away with asparagus and toasted pine nuts on the side.

Notes
- I always recommend skillet cooking for the best crispy texture. Microwaving works in a pinch, but the patties come out soft.
- Pine nuts burn fast, so keep stirring them and remove them as soon as they turn golden.
- For extra flavor, I sometimes add a little garlic aioli or sriracha mayo, but I keep it light so the veggie patty still shines.
- Store leftover cooked patties in the fridge for up to 3 days, and reheat in a skillet or air fryer for best texture.
