1–2 Red onion Thinly sliced
1 cup Red wine vinegar For flavor & color
½ cup Water Balances acidity
2 tbsp Sugar Adjust to taste
1 tsp Salt Sea salt or kosher

1 Bay leaf Optional

Method
 

Step 1:
  1. Peel the red onion and slice it thinly (about ⅛-inch). Place all slices into a clean glass jar.

  1. In a saucepan, mix vinegar, water, sugar, and salt. Heat gently until everything dissolves (do not boil heavily).
