Ingredients
  

1 lb Chicken thighs Boneless, diced
1 lb Smoked sausage Sliced
1 lb Pork Optional
2 Yellow onions Chopped
1 Green bell pepper Chopped
2 stalks Celery Chopped
4 cloves Garlic Minced
3.5 cups Chicken broth Or water
1 can Cream of chicken soup
1 tbsp Cajun seasoning
1 tsp Salt Adjust to taste
0.5 tsp Black pepper
1 tbsp Hot sauce Optional
16 oz Pasta Bowtie or penne
1 tbsp Oil For cooking
1 bunch Green onions For garnish

Method
 

Step 1:
  1. Heat oil in a large pot over medium heat. Add pork (if using) and cook until browned, about 15–20 minutes. Add chicken and cook for 10 minutes until partially done.

  1. Remove meats and brown sausage separately, then set aside.

  1. Add onions, bell pepper, celery, and garlic to the pot. Cook until soft, then stir in Cajun seasoning, salt, pepper, and broth.

  1. Add cream of chicken soup and mix until smooth. Return all cooked meats to the pot and stir well.

  1. Add dry pasta and press into liquid. Bring to a boil, then cover and cook on low heat (or bake at 300°F) for about 1 hour. Let rest for 5 minutes, stir, and garnish before serving.
